Disappearing Aunt...

I've been stuck on this one for a while... My 3xgrt aunt was Elizabeth Collingbourne b1838 in Stepney. Parents were Richard Jones and Harriet Sharratt, step father was George Collingbourne whose name she has taken.
I've found 2 marriage records for her, one in 1858 to William Skinner and one in 1863 to John McIntyre. Pretty sure it's the same Elizabeth as father's details match. (she refers to her step father as her father).
I am struggling to find anything else.. No death record for William so I don't know if he was alive when she married for a second time.. Can't find Elizabeth or either husband on any census records.. I'd like to know where they went to?
If anyone can give me some pointers I'd be grateful!

The marriage record in 1863 for John McIntyre is to Elizabeth Collingbourne - if she had been married before would she not now be Elizabeth Skinner?

Do you have both marriage certificates?

Have you found her in 1841 and 1851?

I've found George and Harriet in 1851, mistranscribed by Ancestry as Willingbourne.  Elizabeth is not with them but one child in the household is Rosina Willingbourne,(Collingbourne) who is a witness to the 1863 marriage.

How is Elizabeth described on the 1863 marriage certificate (widower, spinster, etc)?

Spinster both times and 'of full age'.
The father's name and occupation are the same, but I'm not 100% sure about the signature.

She is described as a spinster on both which is what confuses me.. Could be a different woman but it's funny how both have George Collingbourne as the father with the same occupation.

Yes these are her parents and sister. I found an Elizabeth Collingbourne on another 1951 census working in service so thinking that could be her.

Marriage to William Skinner his occupation is basket maker same as his father John

There is this William Skinner but wife named Maria on 1861 c living

Aah yes I also found this one but the Maria confused me.. Unless he married again? I'll see I can find a marriage record!
