In 1851 there is an Elizabeth Collingwood which has been corrected to Collingbine  :-\

she is a 12 year old servant in Mile End Stepney.  Birth place given as Limehouse. 

living with Henry Jupp 42 plus his wife and children

Yes got this one. Assumed this was my aunt as she doesn't appear on the 1851 census with her parents.

She is certainly elusive after that - apart from the marriages. 

Have you checked for any children born to either of these husbands?  With MMN Collingbourne presumably.

I think the William Skinner that appears on the 1861 census is the same one, both born in Devon, both basket makers. Can't find a marriage record for a William and a Maria for that timeframe though?
I wonder if they married in 1858.. Then shortly after went their separate ways. He moved in with this Maria and she remarried Mr Mcintyre? I don't know why I can't find her and John Mcintyre on any census records following their marriage though.. Maybe they ran away? It's all a mystery!

I can't find any births either. 

What about Scottish records, if John McIntyre was from there he may have whisked her off North of the border.  Or they got on a boat and emigrated.  It's a proper mystery. 

Or she may even have married again!

Maybe the occupation of John Snr would help - Inspector of Public Works.  Even finding one John on a census might help. 

Also the other marriage witness Edward Rust?  I saw a hint for Rust somewhere but couldn't link it.

Ah probably covering old ground but Edward Rust marriage Rosina Rebecca Collingbourne 1864.

I think maybe looking for John's in Scotland is the way to go.
