Thank you everyone for your research and comments, I have spent the day putting them together and searching for anything else that can be found. 
The coach building industry is fascinating.  Would there be likelihood of photos of this business, where would I look.

Having a quick look at the archives, there are also copies of correspondence that may be of interest - eg this letter from O'Brien and Co Pitt St

Cornelius O'Brien (28 yrs, born Dublin) marriage to Elizabeth Chislett at St Andrews, Sydney in 1858.
His parents are Joseph (shoemaker) and Bridget Coolahan/ Coolashan?

Cornelius baptism 27 Sept 1828 St. Mary's Dublin.
Father is Joseph, mother is Bridget.

Shipping arrival onboard "Ferguson" arriving Port Jackson 27 April 1838
Joseph O'Brien, wife and 4 children. (Forwarded from Hobart Town)

Joseph died in Sydney, 30 May 1852 (age 49). Do you have his death cert.? Would be worthwhile getting!

It is possible that Bridget remarried after 1852, but there are too many possibilities with the name Bridget O'Brien in the search results.

EDIT: Or NSW church death record in 1847 for Bridget O'Brien, age 40, could be her.

Difficult to read - one of the witnesses is Cornelius (maybe a brother?).

Joseph born 1843 seems to have been the only child born in Australia. He was the second "Joseph" - a previous son born 1841 died as an infant in 1842.
