It is really good to see all this information.  :)

Can someone read the parish for the Gill marriages?

I can’t see anything for Alexander Gill anywhere.

Lastly, would it still be the case at that time, that the R I C couldn’t serve in their birth county?

Just a maybe, but on the 'Mangerton' which departed Plymouth, England to arrive at Brisbane on 7 August 1861:

- Richard Bowen, b. about 1835, from County Roscommon; and
- Charlotte Bowen b. about 1837, from County Roscommon.

Do you think the church could be Kilglass  - using the long ‘s’

I think you're on the ball, heywood :)

This is the civil parish of Kilglass.

Carrick-on-Shannon is right on the border of Co Leitrim and Co Roscommon and a large swathe of Roscommon is incorporated in the S.R.D. of Carrick-on-Shannon, including Kilglass C.P.
