Do you have their marriage details - fathers’ names and witnesses?
In 1861 there are Donnellys and Trainers (maybe spelling variations) in Wolsingham. They could be relatives.
Baptisms are often a good source with sponsors who could be relatives.

For the life of me, I cannot seem to find anything on either John or Mary before an 1861 census

They were probably still in Ireland.

Oh my Goodness! I can see some similarities with the information I have gathered!! I'm rather new to all this, but I can see from the 1881 census that an Elizabeth Curran has neices living with her, next door to the Donnellys. This could well be Mary's sister.

The ages of the two Elizabeths do not match.
1871 4953/60/40
Elizabeth Trainor 22 yrs boarder b Ireland

At the same time there is in Tow Law
1871 4954/7/7
John Curran 42 yrs
Elizabeth Curran 45 yrs

Then in 1881, you have Elizabeth Curran 53 yrs Staymaker b Kilmegan, Down
With her brother in law William Curran and Donelley nieces

1901 4663/9/10
Elizabeth and William are back in Tow Law

She would seem to be related as 1881 but maybe not Mary’s sister.
