People didn't always know there birthdays even into the 1900s. My father-in-law, born before WWI, never remembered when he was born and a relative of my father's born in early 1920s had 3 different birthdates (the one on birth certificate, birthdate in baptism register and the day his own mother said he was born).
By the time someone's death was registered there would have been even less accuracy as the details on the certificate depends on the knowledge of an informant.

If he was born in Tipperary the U.K. government would not have a birth registration for him.
Away sorting out DNA matches... I may be gone for some time many years!

The 1901 census shows the Fitzsimon family heavily involved with the railway:

What are these different maiden names? Are they within the variations we have shown?

Another tip -  Irish women called Annie weren't necessarily christened Anne. Annie was a diminutive for several names.
My GF married 2 women called Ann although Ann was the official name of only 1. To make matters even less clear, the 2 women were born only 10 days apart. 1911 census form for this family has half-a-dozen errors. Year of birth of eldest son is wrong on 1939 Register. (These were literate & numerate people, used to paperwork and calculations for their businesses. Ages and birthdays weren't important - one of my cousins didn't know her father's birthday.)
