Checked FreeReg, Free Cen, FamilySearch: no mention of Edwin Grimby. No access this week to FindMyPast or Ancestry thank you Covid.
Any sign of him in the 1841 Census? would be a great help.

This search for Edwin Grimbey is to find a suitable Witness on the 1837 MC of Edwin Withers at St Thomas' church. A possible candidate, found today, is Edwin Grimley, born c1801 at Aston, Birmingham; wife Mary Anne Grimley; residence St Thomas, Birmingham. 1851 Census. Could be just right. Other variant names include Edwin Grimbly at Hampshire; and Edwin Grimby, born 1837 (too young).
Doesn't show a relationship to Edwin Withers, but the same first name is intriguing.

At what age was it legit to sign on as a MC witness, please?

One intriguing issue I now have concerns the fact that Sarah's beau, Edwin Withers, was resident at Albion St for his wedding Oct 1837.
Turns out Samuel was married to Elizabeth (1841 Census) and lived at 15, Albion St, the address of Samuel Welch, sometimes a Collector, or a Commercial Traveller according to the various Trade Directories.
Unable to locate a family connection to Sarah.
Sarah's parents were William Alfred Welch b1794 at Rugeley, and his wife Sarah Cheatle. They had six children, who have been discussed in this thread earlier.

Mary b1819, William Charles b1819, Ann b1820, Sarah b1820, John b1824, Henry b1827.

But no Samuel.
1851: Piece/Folio   2051 / 546 Registration Number   HO107
at Albion St a collecting clark.

Perhaps a brother to William the publican?

Slight;y lost returning to this cold after two years and can't work out where Samuel comes into the story.

Also I can't find Samuel Welch anywhere on 1841 or using your 1851 reference?

1841 Census (Family Search) age 45 at Great Hampton St: Birthplace Warwickshire; Page Number 22; Piece/Folio   1144/15; Registration Number HO107 with Elizabeth aged 50 born Warwickshire and a family named Phillips.
1858, (Ancestry) Dix's Commercial Directory, Birmingham, Commercial Traveller and Rent collector 15 Albion St
1860 (Ancestry) Trade directory at 15 Albion St in a house.
(Family Search) Daughter Mary Ann Welch 04 Oct 1874, Christening Place St Michael, Coventry,
(FS) Son, Samuel christening 1800 Warmington.

Had hoped the father Samuel b1796, may have been brother of William Welch b1794 via Rugeley, Staffs.
Not sure where else to look

Samuel baptised Warmington in 1800 looks to have died and been buried in the parish in 1804

Who's son do you think he is?

Perhaps John Welch b1756 at Rugeley, Staffs.
John Welch marr Margaret Brockhouse b1754 d1849
Hoping he was father to William Alfred Welch b1794-1859 (1859 3rd Qtr Birmingham Vol 6d Page 88)
and to a Samuel Welch b1796-1849 (died at Warmington? from Ancestry)
Samuel may be died 28 Sep 1851, at St Bartholomew's church: Page 294 Volume 16 Jul-Aug-Sep Registration Year 1851 (from FS)
