'Sugar boiler' and 'confectioner' are the same occupation in locations where there are no sugar refineries, eg. Whitby and Ripon.
'Sugar boiler' is the name given to the skilled man who runs a sugar refinery - it's he who determines when the molten sugar is ready for crystallisation, eg. Hull.
