Missing from 1841 Census?

Hello,
I am looking for two people who seem to be missing from the 1841 UK Census
William Thorley a cratemaker and his wife Sarah, a Grocer/Fruit dealer both born 1780
William was born in Swinnerton, Staffordshire and Sarah in Hanley, Staffordshire.
I have them in 1851 (Keates Square) with their son James and by themselves also in Keates Square in 1861.  I'm at a loss as to why they would be missing or how else to find them other than the usual sites and checking if they are with family etc.

They do not appear to be in Keats Square in 1841  :-\
HO107/990 Book 10 folio 17 page 27

Where were their children born

Yes, irritatingly they do not appear to be at the same address in 1841 :(

Children of William Thorley and Sarah Marsh:
John born Hanley 1802
Elizabeth born 1805 (d. 1807)
Hannah born 1808
James born hanley 1810 (is on 1851 census with parents and also a market stall fruit dealer/green grocer)
William born Shelton about 1813
George Thorley born Shelton 1st August 1815

According to the 1851 census, transcribed Shirley on Ancestry, William is Blind but not noted in 1861.

In 1851 James was 40 born Hanley.

James Thorley baptism 29 Jul 1810 Hanley, Staffordshire

No sign of the 1841 census for the family.

Georges baptism mentions that he is the 5th son of William & Sarah  :). He was born on the 7th August 1815 and baptised on 19th August 1815.  I wonder where they moved to after that.

I can't find any other child for William and Sarah.  Does anyone have any tips or thoughts on why they would be missing from the 1841 Census? thanks

In 1841 son George and wife Mary + children are in Lane End - Church Street - he is a Grocer.  I'm going to look further at that area
