The thing is I can't find a Lees/Hartshorne or Ralph or Wood marriage at all nor any other Herbert Wood/ ...May marriage either

And yet the 1939 register has been updated with a new married name and even a date against the younger May. Did they have to have proof of marriage to do that?

No, they did not need proof.  If someone chooses to change their name, and tells them, then that is enough.
