Re the 1861 census, it says Agnes is "22", that tallies with the age in 1851 ("12") and in 1841 ("2").

That's Walter's daughter.

Ah, could well be, and well found!  :) My interest is heading back from Eliza (sister of the Agnes you’ve found) who share a mother in Agnes Craig, and it’s that Agnes where the story runs out of steam! From what I’ve gathered so far it looks like Agnes Sr died at or around the time of Agnes Jrs birth. Walter seems to have moved on to wife 2, and by the time she produced a child, Agnes Jr was still with the family. Eliza seems to have moved on around the same time.

The way to make progress with Agnes Craig is firstly, as has been suggested, to look at the two marriage records for Walter and Agnes. It's possible that they might provide a clue. Then see if you can find baptisms for the children and note who the witnesses are. There might be Craig relatives amongst them.

If Agnes was from Berwickshire, there are two Agnes Craigs recorded as being born in the period 1800 - 1810:

Agnes baptised 23-11-1803 (Hutton), parents Robert Craig and Elizabeth Johnston

Agnes baptised 5-10-1807 (Eyemouth), parents George Craig and Elizabeth Lister

Looking at Peacocks born 1800 - 1840, the following baptisms come up with parents Walter Peacock and Agnes Craig:

Walter, baptised Edinburgh 17-10-1828
Mary, baptised Dalkeith 17-11-1836

Looking for 1800 - 1840 Peacocks shows the following, who looks like your man:

Walter Peacock, baptised Haddington 7-2-1803, parents Walter Peacock and Mary Ferme

Several other children are baptised with the same parents. Walter and Mary's marriage* is recorded in Haddington on 22-4-1799 and in Prestonkirk on 4-5-1799.

* What is recorded varies from place to place and from time to time. You don't know exactly what you have until you look. It can be them contracting, banns being read, or the marriage itself.

Thankyou so much for the help, I’m a novice at this and still getting my head around the sources best used. If you don’t mind me asking, what do you use to find baptism records?

Never trust anything you find online (especially submitted trees and transcriptions on Ancestry, MyHeritage, FindMyPast and other commercial web sites) unless it's an image of an original document - and even then be wary because errors can and do occur.

As Forfarian says, you should register with Scotland's People. It gives you free access to the indexes and allows you to download (for £1.20) each page from a parish register. Go to "Advanced Search", click on "Church Registers", then select as appropriate.

In 1861, Walter, Mary and their children, Margaret, Fanny and Walter, are at Gardner's Crescent, Edinburgh. Walter is a domestic coachman.

In 1871, Walter, Mary and their children, Walter and Mary, are at 7 Riego Street, Edinburgh. Walter is a coachman.

The Caledonian Mercury for 15th March 1810 has an advertisement for a sale of property to be held "within the house of Walter Peacock, innkeeper in Haddington". If you look at the original entry for the baptism of Walter (m. Agnes Craig) and it says his father is an innkeeper, this will be him.

I think the Agnes, daughter of Robert Craig and Elizabeth Johnson and born in 1803 Hutton Berwickshire can likely be discounted. She is showing as having married a George Porter and this entry is showing for them in 1851 www.familysearch.org/ark:/61903/1:1:SG62-H3C

Her death is given on some family trees as being on 19 Feb 1868 in Foulden, Berwickshire. Easy enough to check on Scotlands People to confirm if required.
