Could she be mistranscribed and be Marys Aunt ie Pickering/Pickerill?

If her surname has been mistranscribed by the enumerator, then she is Dinah, age 80, from Birch Hill, Staffs, living on her own means and own account, single.

There are 2 deaths in Aston between 1901 and 1911 of Dinah's born 1821, approx.
One is Diana/Dinah Wilcox who could be living with some Pickerings in 1891.

Who were Mary Ann's parents and grandparents?

I looked at Tachbrook because I  though if she was  a sister of Thomas she might be baptised there

Just looked at some trees on Ancestry for Mary Ann Pick* born around 1851 at Hill Top, Staffs, as from 1901 census.

She is in 40 odd trees on Ancestry, and a few have her Mother as Ann Wilcox, around 1825 to 1890.

Have not looked further.

OK, quick look, think Dinah is a servant in 1841, and can be found in other censuses, this looks like a possible birth:
Dinah Wilcox  baptised 8th April 1822 at St. Matthews Walsall, parents John and Sarah
Seems to be an Ann Wilcox  (proposed mother of Mary Ann Pick*) baptised at same time.
