Emily GRAY nee THOMAS died 6 Oct 1909 at  Exeter Street, Lyttelton.  I cannot find a burial record for her.

GRAY - On Oct 6th at her late residence, 55a Exeter Street, Lyttelton, Emily Gray, relict of the late Captain George Gray of Lyttelton; in her 69th year.

FUNERAL NOTICE
The friends of the late Emily Gray are respectfully informed that her Funeral will leave the residence of her son in law, Patrick McGrath, tomorrow (Friday) at 2 p.m. for the Church of England Cemetery.
W T Lester, Undertaker.

Answering part of my own question, the date of death for the husband of Emily Gray...

I think husband and wife would probably be in the same cemetery. [A death notice not found for the captain.]

He is not to be found on the Christchurch cemeteries website either.

But there is a wonderful obituary for him ... The Lyttelton Times, Thursday 13 December 1888 (p3) .. someone has posted it on the tree for the couple on Ancestry,  there is also a photo of Emily.
