Who were his parents?

Joseph Cruttenden born 1702 Burwash Sussex m Mary Monk 1717-1763.
Ancestry has his parents as        Antony Cruttenden and Maria (Mary) Cryer. Joseph Bap 5.12.1702
Famiilysearch has his parents as Thomas Cruttenden and Elizabeth Tindall. Joseph bap 31.5.1700 Brightling
and there is a 3rd Joseph Cruttenden bap in Burwash to Joseph and Maria nee Heathfield 7.1.1702

up until now I have his parents and Antony and Maria but am a tad confused. Can anyone throw any light on the matter please.

Ancestry have British Isles Vital Records Index ...not scans of real records, Familysearch is just IGI  International Genealogical Index  again not records these are donated unchecked information.so neither have the parish records......... Freereg have only transcribed back to 1755 for baprisms they have a marriage

Plus another couple of marriages however you can't go back until you find the real record of his baptism to know who his father ( or potential mother if written in the baptism) is as a marriage is 'normally' in the brides parish and you have no idea if it was his mothers parish

Both FindMyPast and FreeReg have transcripts only, no images.
There are the 3 baptisms you have listed, 2 burials (1703, 1707/8) between the baptisms and the 1733 marriage) - restricting search to Sussex.
The 2 burials to not include age. Sometimes, an infant/child burial includes father's name. Sight of the originals might have the clues to eliminate one or more of the baptisms. Of course, these burials may not relate to any of the 3 baptisms.
Can you find another marriage that you can link to one of the 3 baptisms with a degree of confidence, whether before or after the 1733 marriage.

Also what was the naming pattern of children born to Joseph and Mary?

It's a process of elimination.

Omitted to include 2 Brightling burials, 1726 and 1728 of a Joseph/us Cruttenden.
