BIRTH 24 MAR 1564 Georgeham, Devonshire, England
DEATH ABT 1604 Georgeham, Devonshire, England  robert married  Joane Ellyott

BIRTH 1511 East Down, Devon, England
DEATH East Down, Devon, England       thank you for your help

A good start is the familysearch website.

 A Robert Baker was baptised 24 March 1564 son of William. Most early entries of this date only state father's name.

 Where does the date of 1511 come from.?  If that is for Joane Ellyot it would make her 43 years older than her husband.
Marriages of a Robert Baker in Georgeham are......

 1576 to Joane Blackmore
 1597 to Anne Perryman
 1608 to Eulalye Frye
 1648 to Ann Sparman

  Ancestry gives the same results.

There is a baptism for a Wyllyam Baker on 13 February 1542 at North Tawton.  Father is Roger.

North Tawton is about 32 miles away from Georgeham.

Don't forget that Parish Registers only started in England in 1538. They were introduced by Cromwell.

You can imagine that in those early days after they were introduced, they were probably hit and miss - also many will have been lost or damaged.
