I would like to know why Mary had a house in Eton Wick but Probate was at Llandaff.

I think that Mary Married into the Kirtland Family at above normal age.
If you can see her entry in the  1939 Register you well probably see why.
I can not think of any reason Probate should be held in Wales.

She seems to have spent most of her life near Windsor.
