The license for the Sarah Calverley marriage is easy to find. The date is 10 Jun 1760 at Wardleworth, Rochdale. For Sally Simpson- 18 Nov 1764. Interestingly, in both licenses, John Hey signs his name, which seems somewhat unusual as most 18th Rochdale ancestors I've encountered were illiterate. That might suggest that the two were the same person.

 Wills- I don't think that the family were in the financial position to write wills, and haven't found any as of yet.

I found both marriages at St. Chad's, Rochdale on Lancashire Online Parish Clerks. Can you give a source for the marriage licence? I couldn't see it in Lancashire Archives catalogue.
If you need opinions on John Hey's signatures you could post them on the handwriting board for people to compare. 
A person didn't need to be rich to leave a will. Assets of one of my ancestors was calculated at £10.
