Hi
Trying to find a birth date for my 4x great grandmother - Elizabeth Knot.
Married my 4x gr grandfather William Shorey in April 1768 at Shillingstone and had 3 children.

Dorset OPC (Online Parish Clerks) only shows baptisms from 1781.

Shillingstone was also  known as Shilling Okeford.

You will be very lucky to find the actual birth date prior to registration. Baptismal registers were not required to supply that information, we are lucky when we find an incumbent who has chosen to include the birth date

There was a baptism for an Elizabeth Knot on 10 May 1727 in St James, Shaftesbury if that might be a possibility.

Father's name James. It would make her about 40 when she married though!

Then there is a baptism of Elizabeth Knott 16 April 1841 Bridport - father William, mother Jane.

I don't know the area, so not sure if these would be nearby parishes to Shillingstone.
