Hi Jo Thanks for that.  Wonder if that is really her middle name, seems odd!  Perhaps meant to be Ann??
I think it is Sarah ANN Stockman. In the 1861 census she is living with Charles and Mary J. Blank. No relationship is recorded, but it looks like she could be Mary's sister.

Added birth rego:
Milligan - Jardine – Glencross – Dinwoodie - Brown: (Dumfriesshire & Kirkcudbrightshire)
Clark – Faulds – Cuthbertson – Bryson – Wilson: (Ayrshire & Renfrewshire)
Neale – Cater – Kinder - Harrison: (Warwickshire & Queensland)
Roberts - Spry: (Cornwall, Middlesex & Queensland)
Munster: (Schleswig-Holstein & Queensland) and Plate: (Braunschweig, Neubruck & Queensland & New York)

Hi Dianna,

Been out for the day, but Sarah’s baptism clearly reads Hand, (she certainly may have preferred Sarah Ann)  there is also the marriage of William Stockman, bachelor and Catherine Doyle, spinster, both otp, 16 Mar 1834, Tormohan, William signed, Catherine left her mark, witnessed by John Stockman (x) and E Eaton.

Also a baptism at Tormohun of a William Floud Stockman, 10 Apr 1812 (born 24 Mar) s/o Thomas and Ann. (Not sure if this your William?)

A burial of interest...William Stockman, 27, buried 10 Oct 1841, Denbury Devon.

Jo  :)

Sarah Ann Stockman   38 single dau. Torquay, dressmaker
Bertie Stockman BLANK 12 grandson Torquay

Bertie’s birth registered as Stockman   ???

He appears on later censuses as Bertie Stockman but as Bertie Blank age 2 on 1871 census son of Charles & Mary Jane 1871 Piece: 2087 Folio: 71 Page number:   9

Edit to add
it appears that Sarah Stockman was probably Bertie’s mother and he was living with her married sister Mary Jane Blank in 1871 (not sure where Sarah was living) and Sarah is with Bertie’s family in 1901 & 1911 noted as a widow, dressmaker (retired), 1 child

Hi Thanks very much for the extra information.  Interesting what you find out isn't it with Bertie being Sarahs son, even though I found the baptism of Bertie in 1872 with Mary J and Charles being his parents.  Looks like an informal adoption I guess.  Anyway I will put on my pedigree sheet (for now!) that Catherine DOYLE and William STOCKMAN are Mary Janes parents, seems like solid evidence to prove that.

At some stage I will do more research on Catherine DOYLE, if she really was born in St. Heliers Jersey or perhaps Ireland, Doyle is Irish for sure, so at least I know her origins, which is great.  Thanks everyone for your input and time.  Very much appreciated.  Kindest regards from Sunny Sydney Dianna
