I have notified an error in the spelling of Bryan's christian (Bryne) name on the 1861 census as that is why I couldn't find the entry
Census Information is Crown Copyright, from www.nationalarchives.gov.uk
Carlin (Ireland & Liverpool) Doughty & Wright (Liverpool) Dick & Park (Scotland & Liverpool)

Without a county you'd have to hope the baptism record, if it exists, was indexed properly. I didn't find Mary Noon, born c 1850, parents Brian and Margaret (Jordan) Noon in either ancestry.com or findmypast.ie's indexes. I didn't find her sister Bridget, born c 1845 either.

Rootsireland.ie's index is said to be better. I don't have access.

https://www.johngrenham.com/surnames/

at the time of Griffith's valuation, the names Jordan and Noon overlapped in Galway but more often in Mayo, but also in Armagh, Sligo, Westmeath, and Roscommon, so that is not much help, except to say that the odds favor Mayo.
