That birth for Henry Brown Dawson, according to South Tyneside Registrar's site, was registered in the sub district of Westoe, register 217 entry 408

You could try emailing them , give them their local reference (GRO ref not much use to a local registrar)  and asking if they could check the register and confirm/deny that the mother was Eliza Dawson ?

They are not allowed to give you any new info but usually will confirm deny what you ask.

At least then you'd have a firm starting point and be more sure that its the right cert should you want to buy it?

District of Westoe is the right district for Denmark St if that is any help

Don't doubt yourself ;) just follow the real records and know what primary and secondary information is on each one, find EVERY real record you can so you have the opportunity to cross reference and  that you are human and humans like logic/reason and many times logic doesn't come into it especially todays logic/reasons.
ALL the records we research were never intended for FH they are just a record of the event that happened, so you have to read between the lines and remember that times 100yrs ago were different to now, it 'looks' like he was illegitimate and then in society it was 'shameful' not only for his mum but for him too and for his whole life so understandable why so many tried hard to hide that.

I would agree with manukarik it looks like 75 Denmark St although you know the address before marriage could mean a lodging address or even leaving a suitcase full of clothes for 3 weeks only while the marriage banns were read.

.....and as far as his added name, maybe he just liked it, maybe it was his grandmothers surname

Yeah, I was checking to see if there was any relation at that address but nothing.

A Scott family lived there in 1881 but you need later than that, maybe worth looking at old street directories to see if that gives you any clues

Yeah i checked the 1911 census and it was the Davidson family.

Interestingly, there is a death registration for a Henry Nelson Dawson, Q3 1909 South Shields, aged 59 .

He'd be the right sort of age to be your Henry's Granda? You'd have to track back and see if you can connect him to Eliza but it sounds like a fairly good straw to clutch at?

There's a potential Eliza as a child with parents Harry and Margaret and several siblings in 1881.
Piece: 5016, Folio: 92, Page: 8
In 1891 he is Henry instead of Harry. 
Piece: 4159, Folio: 30, Page 11, Year of birth matches the death as Henry Nelson Dawson
Eliza not with family in 1891. Think she is a servant with Snowdon family
Piece: 4163, Folio: 28, Page 28

Looks like Margaret's maiden name is Smith
Berks / Oxon: Eltham, Annetts, Wiltshire (surname not county), Hawkins, Pembroke, Partridge
Dorset / Hants: Derham, Stride, Purkiss, Sibley
Yorkshire: Pottage, Carr, Blackburn, Depledge
