I thought this would be a quick internet search to get the answer, but alas no!

What I am trying to establish is when did the UK birth certificate change from capturing fathers name and profession etc to the current version that doesn't?

I presume you meant an England/Wales certificate?
Scottish certificates have always been different; Irish ones, too, I believe.
