That is correct, I was summarizing from the 1851 census, he was not there.

It may be that James Watson Snr died much earlier on.

There is this entry in 1841 www.freecen.org.uk/search_records/5902e9afe9379091b1db04df/marion-watson-1841-dunbartonshire-west-kirkpatrick-1771-?locale=en

I wonder if Marion could be showing under her maiden name in 1851 (quite common in the earlier censuses to see married/widowed women listed under their maiden name) www.freecen.org.uk/search_records/5a149302f4040b9d6e8e5378/marion-brown-1851-dunbartonshire-west-kilpatrick-1771-?locale=en

I didn't realise widowed women could be listed under maiden names. Why was that?

Just jumping in here to try and answer your question about widowed women being listed under their maiden names.

It was and still is in Scotland at least quite legal and customary more especially in byegone days to continue to use your maiden name after marriage, widowhood or divorce. If you are searching for a marriage, remarriage or death on the Index at Scotlands people it will be listed under all previous names.

Generally speaking, no, because they would have taken their surname from ther father, not their mother.

However if you are having difficulty finding them it might be worth a try, because it could happen.
Never trust anything you find online (especially submitted trees and transcriptions on Ancestry, MyHeritage, FindMyPast and other commercial web sites) unless it's an image of an original document - and even then be wary because errors can and do occur.
