Meant to add yesterday, in case it is the correct family, there are also these births to John and Agnes COOMBES in NSW:

Also there is a death in NSW for an Agnes COOMB (7521/1827 V18277521 2C  &  144/1827 V1827144 11) aged 44 (no parents names given on the index). However, there is also an Agnes COOMB arrived as a convict in 1812 in NSW, so need a bit more investigation to determine if this is Elizabeth COOMBES' mother who died in 1827 or the other Agnes.

In those "V"series Early Church Records, volumes 1 to 44 are C of E only.  1827, so it  is a BURIAL and it is registered in two parish registers - Vol 2C  (so NSW Chaplains) and Vol 11.  Burials in the ECR series are scant on family history information, and you wont find names of parents from that record, nor who was the spouse, nor details of children for the deceased.

Rev William Cowper's register at St Phillips, Sydney has the burial as Agnes COOMB buried 4 September 1827, aged 44.

Agnes was buried Devonshire Street Cemetery.  In 1901 Mary MOSELY of 23 Gordon St Petersham arranged the re-interment to La Perouse Cemetery (Central Railway Station needed the cemetery land at Devonshire St). 
Reinterred under same application:
Agnes COOMBE (2 Sept 1827) aged 44 years C of E to Section 1N Plot 78, CofE, La Perouse and Thomas COOMBE (14th January 1826)  aged 6 years and John COOMBE (11th May 1829) aged 48 years.

Mary COOMBE married William MOSELY in 1837, in Sydney, Rev William Cowper, C of E. 
Line 1338 of Volume 21.  He arrived per the Hadlow in 1818.

Thanks for all the quick responses here, very much appreciated.  It's thrown up some potential new information. David Jenkins senior died 1845 at the Wyndham estate (Dalwood) so that rules out the newspaper article of a later date, and also raises doubt that the Elizabeth Jenkins in Olive Street that I located is the same Elizabeth I'm interested in.
 
Potentially the marriage of David Jenkins jnr (b.1842) to Elizabeth Parker is new information. He later emigrated to NZ (date unknown but circa 1860-1870) with the rest of his siblings and mother Elizabeth, and married a Catherine Harvey in Invercargill in 1870, so this may have been a second marriage.
