Plus William & Thomas shortly after but nothing in Scotland.

This looks like the same family in 1871, still at Wellington Lane, although William Sr's PoB is Sunderland and he's shown as married but with no wife present: https://www.familysearch.org/ark:/61903/1:1:VBZV-CXH

The William who died in 1872 as suggested by Neale is shown on the free index on Durham Records Online with an address of Ayres Quay.  This map shows Ayres Quay Foundry on Wellington Lane, leading up to Ayres Quay and the Ayres Quay Bottle Works: https://maps.nls.uk/view/120934737#zoom=5&lat=10378&lon=6652&layers=BT

In 1861 William is listed as a widower, so wife Mary likely died between 1851 and 61; maybe associated with birth of Thomas.
Then in 1871 William is listed as married. ??  ???  Wife Mary has not been sighted since the 1851 census.

EDIT to Add ....

This is the birth reg of the last child, Thomas
PATTERSON, THOMAS       Mmn - MCKIE

Is this the death of his mother Mary? It puts her birth at about 1819, which is not quite a match for the age suggested in 1851 census. (about 1823)

Interesting to note
William was allegedly a foreman at Mr. Ray's foundry.

I wonder if he died at work?

It looks like Hugh went bankrupt - 7th from bottom: https://www.thegazette.co.uk/Edinburgh/issue/10968/page/237

Also in the Stockton & Thornaby Herald, 2 Apr 1898
A THORNABY FISH HAWKER'S AFFAIRS
On Wednesday at Stockton Bankruptcy Court, before Mr Registrar Turner, Hugh Patterson, fish hawker, Thornaby, appeared to undergo his first public examination in Bankruptcy.  The debtor stated that he was a bottle maker by trade and was employed at the Thornaby Bottle Works until 1883.  He then worked as a labourer, and afterwards commenced business as a fish hawker. His liabilities amounted to £99 11s 3d. - In reply to the Official Receiver (Mr Stubbs) the bankrupt said he started business without any capital.  He owed Abraham Hyams £18 8s and Raphael Hyams £9 13s for borrowed money. He first found he could not meet his payments three years ago, but was no scholar and kept no books. It was impossible for him to account for his deficiency. - His further examination was adjourned till April 27th.
