Trying to find the wife of William George Moule, born 1858

William George MOULE, born 9 Nov 1858 Saint Saviour, Surrey, marries in 1878 IV in Saint Saviour Southwark, London Emily Maria Jones, born 1857 also in Saint Saviour.
They get three children: 
William Thomas Moule, born 2 Nov 1879 Lambeth
John Edward Moule, born 1881 Lambeth, died 1886 Edmonton
Emily Eliza Moule, born 1883 Lambeth.

I find the parents in the 1881 census, with their first child, but in the 1891, 1901 and 1911 only William is mentioned, not his wife. His marital status is always given as "married". I am at a loss to understand what this means. Does the couple live separately without formally divorcing? Or could a widower sometimes also be recorded as "married"?

Could this be her death

Emily Moule died in Claybury Asylum aged 60
buried 27 Apr 1918 Chingford Mount Cemetery, Waltham Forest

Yes, that could be her death, but I still do not see how that explains her absence in the various census years where her husband is mentioned.

There are two records - admission and discharge for Emily Moule , born 1858.she was admitted from Newington 14th February 1891 and discharged 18th February 1891 to Grove Hall Asylum. Her religion recorded as Baptist.

This may/not be her.
The child Emily is also not on census in 1891 with her father. :-\

Grove Hall Asylum is at 1891 318/75

There is a married E M inmate. She is a housewife but birthplace not known.
If Emily was in an institution, she may be recorded by initials only.

Just to point out that Horton Hospital/Asylum isn't in Buckinghamshire, but in Surrey. It's one of the group of asylums around Epsom. Ancestry have put Horton in the wrong county throughout this database.
