The deceased wife's name doesn't look right, but it is possible that he'd remarried.

The other thing is that he seems to be a "cordonnier' while I only just realised that the Pierre Jean on the 1891 Jersey census was a "farmer's laborer" (if only the OP had given these details!!)

Well , he is a " cordonnier " at his marriage with Arthemise.

Many many people even today - pick Jersey tomatoes and Jersey Royal Potatoes 3-4 months of the year - it is like Piece Work - the more you pick the more you earn... no reason why he took a break from being a Cobbler for 4 months - still looks like the right man to me - I think Joger has hit the nail on the head  :) :)

What is strange is that Pierre Jean Leroi, widower of Euphrosine Mancel ( who died july 1869) , husband  then widower of Arthemise Jeannette  (who died in 1898 ) is said to be widower of a wife called Mancel (not Jeannette) in the tables of succession  of Coutances . A mistake without consequences for the heirs ? Apparently he had nothing to bequeath.

Pierre jean's mother and father:

Thanks guys .. I'm a lot happier with that 1906 death after being pointed out that Pierre was a shoemaker and a widower in 1870!
