Thank you but not sure about this.
If he were Ann and William's son born in 1875 why is he not on the 1881 census at 11 Burleigh Street with his unmarried parents and younger brother William.
More work needed on my part

He isn't necessarily the son of William.  It was not uncommon for the grandparents to end up raising illegitimate grandkids so the daughter could move on and find a husband.  Or he just happened to be staying overnight on census night at Grandma's house!

I had the same thought that Ann had an "affair" with someone before she went to work as a servant in William's home. The census for 1881 shows their son as William Webster but I have found a birth transcription showing his name to be William Webster Proudfoot, I am now inclined to think that Catherine and Caroline are one and the same person which links into your theory.
