Seems to be getting a little clearer.
Now found a baptism for a JOHN THOMAS PROUDFOOT (b 18/9/1875) which shows the mother as ANN PROUDFOOT a single woman residing at 54 SILVER STREET, SUNDERLAND.
Then found a baptism for JANE ANNE PROUDFOOT (b 13/5/1886) with mothers name as ELLEN PROUDFOOT fathers name JOSEPH (possibly CAROLINE'S 3rd son with husband GEORGE) living at MALINGS RIGG, SUNDERLAND in the same street as she lived in on the 1891 census with her daughter ANN (WEBSTER)

The grandson "Thomas" on Silver St in the 1881 would be John Thomas Proudfoot; his mother Ann living with future husband William Webster on Burleigh St.

In June 1883, there was a disaster at the Victoria Hall, Sunderland, where just shy of 200 children died as a result of being suffocated.
The newspapers of the time reported just over 190 deaths, but the wiki reports less:

Matthew Proudfoot was one of the very first Royal Mail Guards - I will find out what year - Lancaster to Carlisle  late  1700's ..

Thank you but not sure about this.
If he were Ann and William's son born in 1875 why is he not on the 1881 census at 11 Burleigh Street with his unmarried parents and younger brother William.
More work needed on my part

Sarah Toll's husband George died in 1849.
I believe her parents were Thomas and Ann Robertson Oldfield.
