Does it give John's parents names on the marriage cert.?

You could try looking through this website for John's marriage to Catherine and/or Patrick's baptism in Ireland, there are  lot of images so it might take a while :)

Where are they in 1851? I'm not using Ancestry at the moment and can't find them using FindMyPast.

John’s parents are not given in the marriage record. John, Catherine and Patrick were in Prince Edward County, Ontario, Canada in 1851. Their last name was spelled phonetically as Georden on the immigration document.
I will attempt to look for John Jordon on the Rootschat site, as you suggest. To date, I have found only one possible birth record for a Patrick Jordon circa 1840: born 1841 to John Jordon and Mary Daly in Castletownroche. The birth records of John and Catherine, as well as their marriage record, remain elusive.
