I am trying to find the mother of Richard Pincock born c 1814. He married Margaret Hill on 27 Aug 1838 at All Saints Wigan giving father's name as Roger Thompson. On 1841 census he lived at Lower Croft Wigan aged 25. On 1851 Census he lived at The Robin Hood Inn, Hallgate Wigan aged 35. His place of birth is recorded as Euxton. On 1861 census still at Robin Hood Inn Hallgate, Wigan his place of birth is recorded as Eton, Bucks. He died in Nov 1863 aged 49 and was buried in Wigan Cemetery.

I noticed this baptism in 1810,

JOHN ARCHER    
Born:  19/2/1810    
Baptised:  19/2/1810

Mother:  Ann        
Sponsor 1:  Roger THOMPSON    
Sponsor 2:  Mary PINCOCK 

so it seems that Roger and Mary knew each other for at least a couple of years.

I had been looking for any information earlier today, but didn't find this.
I don't think these Catholic registers are on the major genealogy sites.

There are baptisms and marriages on familysearch and findmypast in the area for some Pincock families, which must surely be related somewhere.

I see from your second link, the parish church was not built until 1864, and prior to this baptisms took place at Euxton Hall chapel. 
Here's a photo of Euxton Hall, (now very much smaller in size evidently).

Also in this transcript of baptisms from Euxton Hall chapel is a Roger Thompson born 2.11.1789, father Thomas Thompson, mother Jane Insey (?? next to her surname. I expect it is difficult to make out in the actual register). The actual registers are held at Lancashire Record Office.
The web site says there are no marriages at the chapel until 1849. I wonder where they went to to get married from the village?
