Does "John Canfield" ring any bells?

Hi

I've made very good progress on my family tree, but I'm struggling to find out much about my 2nd great-grandfather John Canfield (b c1825, St Pancras; d after 1891).
He didn't marry my 2nd great grandmother Sarah Douglass, but his name appears on their daughter Alice's birth certificate. John was an engineer/engine fitter, and he appears in the 1841,1881 and 1891 censuses, living in Lambeth, but not in the 1851/61/71 censuses.

One suggestion is that he may have been at sea operating/fixing engines during at least some of these periods. Does anyone have any idea where I could pursue this somewhat vague lead?

Or is there anyone with Canfields in their family tree who could offer any information?

In 1871 the family were living at 52 Murray St when a son was baptised

Thanks all - I had some of this info but not all of it.

Where John was in 1851 and 1861, however, is still a mystery, as is why he didn't marry Sarah Douglass. I can't find any evidence that either of  them were already married.

There is a John Canfield occupation Stone Mason age 52 bn Marylebone with wife Elizabeth in Stanhope Street, St Pancras in 1871 - RG10/205 f23 p27

In 1861 he is at RG9/ 215 f109 p18
