In the 1861 Census, I have just found John Errington who was a coal miner - that's just 2 years before he took over the pub.  He was unmarried so that suggests that Sarah Smith was her baptised name and, by the same logic, Henry Smith was born whilst John Errington was still single so those two were born out of wedlock but still loved as he was looking after them even though he did not give them his name.  If he married at all it was between the 1861 and 1871 Censuses and all the other children were born in that period.  It seems likely that his wife also died in that period perhaps in childbirth with Isabella.

Looking at the overall picture the mothers name and/or MMN always includes a possibility of Smith and although that is not proof - it is pretty compelling.  And this "Q1 1865, Gateshead John Errington and Jane Smith on the same page in the register and there is a death for a Jane Errington in Q2 1870, Durham, age 36" ties it all in because the Ox had taken off as a pub and had a large customer base of miners, coke oven workers and railway workers.  John Errington had started to make more money than he ever did as a miner and may have been putting his house in order.

I know this is largely conjecture but it fits together as a credible story.  All the children having the same mother and father who did eventually marry also sits well.  In addition, I have never come across any stories or even rumours that he was a womaniser but the picture I am getting is that he had no interest in other women after Jane died.

If I were doing a family tree, I might not be satisfied without much more proof.  But I am trying to place these people in the context of his pub business and they all seem to slot in comfortably.

That 1870 death.

Burials, Lanchester District - Record Number: 1217264.2
Location: Tanfield, County Durham
Church: St. Margaret
Denomination: Anglican
11 Jul 1870 Jane Errington, of Marley Hill, age: 33

Marley Hill is a little to the west of Gateshead.

I previously found this as the only possible Errington death for Isabella’s mother, but couldn’t find any other connection.
AlanBoyd  Marley Hill is not very far from Tanfield or Oxhill either.  The death date would also fit in with her dying in childbirth (or shortly after) with Isabella.

This indicates that Henry died before his father - whilst they were both still at the pub and Frederick died whilst still living at his grandfather's home at Mayo House.  I think you have cracked it.

As Henry was the only one of his offspring with John in 1881, I wondered what happened to the others
Isabella  would only have been 11.
