Tracing Gt.Gt.G.Mother. Catherine Gonzales Smith's Parents.

CATHERINE GONZALES SMITH, married PETER Mc ELROY IN 1853 (?) & HAD 4 CHILDREN,Bernard, Catherine, Ellen and Peter in Newcastle UK. She is my Gt.Gt.G.mother.
We would like to know Cath. GONZALES (link)...is there a Spanish connection from her ancestors?
It is thought that her husband Peter (1820 - 1909) returned to Monaghan, Ireland after she died.
Her daughter Catherine (Kate) went to Australia, 1881  and gave her second child the name of Vera INEZ Lucy.   CATHERINE  died young after having more children.
The Gonzales name has puzzelled family, and would like to know how this name was dropped into our family history, and as she had the name, it's thought to come through her lineage. 

Any thoughts and hints would be appreciated from this knowledgeable forum please.
