Tying to find the birth date of norah sullivan born in Cork, Ireland.
She married Samuel Ellis born in swaffham, Norfolk, England in 1779.
I don't have a marriage date or location.

Since civil registration of births didn't start until 1864 and many church records don't go back before 1800s it will not be easy with only a common name, approx. date of birth and a county.

What documentary evidence do you have that she was born in Cork?   How do you know her surname was Sullivan if you don't know when or where they married?

Do you know how old she was?
I can see Samuel in the 1851 census in St Pancras with daughter Rebecca; he's described as married but his wife is not with him.
Can't see them in 1841.

Is Cork based on the info in a tree on Ancestry which shows a Norah Sullivan born in Cork?  That entry is in the Civil Reg list which only shows births from 1864

A Honor Ellis was buried 1832 Swaffham.  Nora/Norah can often be a corruption of Honora or Honoria

Rebecca Ellis is with her sister Frances age 43 and brother-in-law Sydney James Payne 39in 1861 census. Frances is born Swaffham Norfolk.

On the bapt of William 19 Dec 1811 Parents are Samuel/Honor Sullivan**
As noted by CaroleW noted can be used as Norah/Norah also.

Interestingly Mother is also down on Burial of Grace 1808  Maiden name late sewell
And on her bapt 1808 to Samuel/Norah, Mother nee SEWELL
