In my analysis I did note a number of entries "Victualler and Spirit merchant" (or similar); a similar situation with grocers.

In 1810 William was the grocer at 163 Stockwell. In 1811 it's Thomas, grocer at that site but a Wm Smart, grocer, now appears at 110 High St. In 1812 Wm's at "No 140 High Street, grocer and spirit dealer".

Thank you Forfarian, your 'speculation' proved to be spookily accurate. Mary Smart and Thomas Blyth were married  in Glasgow in 1838. Their son Thomas Smart Blyth was born in Govan in 1853. He was, as a matter of fact, the second son to be named Thomas Smart. Another son bearing that name was born in 1843 but died that same year. Thomas Blyth snr. died in 1875 aged 67. A few years after taking over Thomas Smart & Co from his father, Thomas Smart Blyth seemingly looked to pastures new and decided to study law. That's presumably why he passed the firm onto Charles Wregg. In 1884 records show that Thomas emigrated the the US. His profession was listed as 'Lawyer'.
