Well that threw a spanner in the works.

If he died c 1825 then Ann may have remarried?

The William Gripper who died 30 Jun 1840 was age 25 from what I can see.
Jasper Gripper was bapt 14 Feb 1810 to THOMAS/MARTHA
William also to same Parents 08 Mar 1815, mother as Martha Bryckner Gripper
1st child seems to be Martha Griffers *1806
Thomas was a Tanner
He was buried 09 Sep 1834 age 53 abode The Tan Yard

Thanks Vance.  This could certainly be Eliza's father.  I would love to read the article, but it's not among the titles in the British Library Newspaper archive that I have access to.  But the freeREG transcriptions were also helpful in terms of his changes in occupation over the years.

Hi Trish.  The one who died in 1840 is the one whose will I have a copy of.  It's interesting, but it's not my family.  Not to worry... onward and upward!  The freeREG transcript for Whitbread and Ann's marriage  shows Lucy Stevens GRIPPER as a witness so I'm going to follow her up....  seems like there's another family connection there somewhere.

There are a couple PCC wills at TNA (possibly just one person, with two wills registered?)

William Gripper, Brewer of Hertford, Hertfordshire, 6 April 1809
https://discovery.nationalarchives.gov.uk/details/r/D353064

William Gripper, Malster of Hertford, Hertfordshire, 14 August 1810
https://discovery.nationalarchives.gov.uk/details/r/D212092

William Gripper in Hatfield was also a malster/maltster. Could he be the son of the second of the above? Hatfield and Hertford are not far apart, about 6 or 7 miles.

It looks like William Gripper, maltster of Hertford, could be the father of William Gripper of Hatfield. From the will of William Gripper, Maltster of Hertford, Hertfordshire, 14 August 1810
https://discovery.nationalarchives.gov.uk/details/r/D212092
Wife Elizabeth
Son William
Daughter Caroline
Executor Thomas Gripper (and others)

The marriage of William and Elizabeth:
William Gripper and Elizabeth Sams married at Hertford All Saints 29 Apr 1790
Groom of St Andrews Hertford

And their son:
William Gripper, 29 Mar 1791, son of William Gripper and Elizabeth Gripper
Hertford, Nonconformist

Hi Trish - I found those too :  doesn't look like there was a link to my folk.  But Vance - those links are great.    I had that 1791 birth - nonconformist - as a Quaker - which seemed a bit odd in the family as all other BDM's were Anglican.  But it certainly seems there was a William in each generation (just as there was a George in eevery one of the Coleman's).  My Eliza also had a brother William and a sister Caroline....
Oh and I found George Coleman  in the 1841 Census....  he was in Dalston (Middlesex)  https://www.ancestrylibrary.com.au/search/collections/8978/records/7681172   Registration district - St George in the East - His mother Sarah, brother Whitbread (mis-spelt in the transcript) and sister Ann were in the household.  Unfortunately his occupation is illegible.  His father was apparently elsewhere on census night.
