I came across this entry in an 1851 census return. Does it mean that he was absent from his job, absent on the night the census was taken [he is given as head of household]. Or what.   Any ideas.

It could be that your fella was working away.  In that case like GRACELAND said he'll pop up somewhere.  I typed in Google " 1851 Census Strays" and it brought up lots and lots.

Might be worth checking them out.
