i have seen on census returns for farms servant (indoors) i supose it differenciates between a farm worker '' hands on in the fields'' and someone that is employed within the house itself, i.e. cook or maid or butler etc, cheers, kali.

It's a strange description. Why not say cook or maidservant?

I wonder if it's connected with the big house ... upstairs and downstairs, indoors and outdoors.

The terms indoor and outdoor were nothing to do with where the worker or servant worked they referred to where they lived.

Thus an indoor worker actually lived on the farm although not necessarily in the farm house where as an outdoor worker usually lived in the village and came to the farm to work.

A great aunt of mine was an indoor worker, she made christmas crackers.
