Well it would appear that William is the father of the children shown on the 1841 census according to the letter. What would be interesting and may finally establish this fact are the baptism records. They should record the fathers occupation "Farmer" and an abode that may be the same as the 1841 census.
Not sure if you have an Arthur Wedd baptised 3.11.1819 parents William & Ann. He went on to marry Mary Simpson 1842 in Kent and died 23.8.1908 aged 89 in Mount Gambier, Grey, South Australia. His wife Mary died aged 80 2.1.1902 Glenburnie Grey SA.
There's also a JANE Wedd born c 1825. She married a Joseph Lowdell 19.5.1850 Strood Kent. Sadly Joseph dies in Kensington 1850. She goes on to marry 13.11.1858 as a widow a James Herring widower. Her father is recorded as William Wedd -occupation "Farmer"

Sorry should have added Jane Lowdell appears as a widow on 1851 census ref ho107 1500 586 8 as a widow, wet nurse, born Shorestead Kent. Also 1871 census ref rg10 779 24 1 with James and several children. Her birthplace this time is Chatham Kent.

Have you investigated whether there is a list of monumental inscriptions for Bredhurst - alternatively can the sexton help identify the grave and what is or was inscribed upon it?

Good plan - I'm onto it!

Apparently it said

To the Memory of Ann Wedd of Sharsted, Kent who died 21st Feb 1836 aged 44 years.
Also of William Wedd husband of the above who died 18th Apr 1842 aged 85 years.

Not a lot of help.  :(

PS - Except to  establish that William did indeed marry Ann, thiry years his junior - which ticks one box at least.
