Sorry for asking so many questions.
I've tried online translators but they don't like the word "Manouvrier".
What would be an English approximation please?

Journalier, manouvrier, brassier are apparently the same occupation, just called differently in different areas.
It appears that it can cover various things, depending on locality. It seems to suggest a "daily" worker - if in a rural area, someone who helped out at the harvest and otherwise took odd jobs here and there working for farmers, perhaps also having a small amount of land to work themselves, or another secondary job such as weaving to cover the winter months. If in a town, someone who took jobs by the day as and when they came up.
