Roscommon / James McCarthy from Roscommon

Our granddad {James McCarthy} was born in Roscommon Ireland. We don't know his age or anything about his parent's, all we know is he was at Seaforth barracks in Liverpool around the 1900's, then moved to Manchester to work on the Manchester ship cannal.
He met and married our grandmother Margaret Ann Farrington, who was born Dec 1882 in Leigh. We know a lot of record's in Ireland were destroyed and we think this is why we have drawn a blank. Has anybody else had this problem.
