Gilson from Whitehead

When did the Gilson family name change from Whitehead? Family were in/near Tullamore in late 1800s

I know that there was a Gilson in Charles Street in Tulllamore in Griffiths. The name-change also  went in the other direction i.e. James Gilson, butcher in 1910 'morphed' into James Whitehead, retired butcher in 1911 - same family names, same ages, confirms identity.

But I am still confused.

Not sure why the different surnames 1901 and 1911 but the signatures for James Gilson and James Whitehead look they were not done by the same person.
Away sorting out DNA matches... I may be gone for some time many years!

Yes, saw it later and it is very helpful. However I didn't consider outside Offaly and picked it up on Google.
