I do have Carre in my Family Tree but a little more info would be helpful as 'Helier' was a name passed through generations
Are we talking Helier Carre 1811 of Catel, a shoemaker?
Emilie born 1860
Lived at St Mary de Castro in Catel
Must be because Helier is still alive in 1891 and Emilie M is shown as wife of Ernest Dodd, living with Helier. Ernest born in Forest 1862 and shown as a plasterer.
Florence A Michel is shown as their daughter aged 7.

I think, but not confirmed, that Helier is a son of Jean Carre (1786-1855) and Mary Torode (1788-1865). They married 10 May 1810.
Jean was a son of Jean Carre (1764-?) and Margaret Ozanne (1765-1814). They married 11 Jul 1786 at Catel.
As I say not 100% but I think this is the family you're looking for
