Hi,
I am trying to find out information of who George Jackson's father and mother were and also his siblings. I know George Jackson married Rachel Toulson in 1850 in Lincolnshire.
Any information would be appreciated about my great-great-great grandfather.

After 1837, fathers' names and occupations are shown for the bride and groom.

Hi I see in 1851 he is a Journeyman Tin Plate Worker, their is this George in 1841:-

Hi,
I do not have a marriage certificate. I found this record on Ancestry. It did not show parents. I did find a census with his mother being "Ann"...that is it.

As you have access to Ancestry I assume that you have the 1841 - 1871 census information for George Jackson & Rachel

Note that Rachel is a widow in 1871 census - George Jackson died 10 Feb 1868 aged 48 (some reports say he was 49)

From the census & his death:
www.familysearch.org has the following christening
George Jackson Bp 6 Mar 1819 Newark Upon Trent Notts - son of John & Ann Jackson
Some of their other children shown are:
William Jackson - Bp: 7 Sep 1821 Newark
Eliza Jackson - Bp: 8 Oct 1824 Newark
These names, at least in part, match the 1841 census information provided earlier

There appears to have been other children. Another William & Eliza who doth died young
Haven't spotted Edward's christening but may be there and have just missed it.

Although all the above points to the fact that your George was the son of John & Ann it is recommended that you attempt to confirm this by purchasing his Marriage certificate.

Unfortunately Jackson is not an uncommon name so the above cannot be classified as "proven"

George's marriage is indexed here, in the Lincoln (rural) spreadsheet: http://mi.lincolnshiremarriages.org.uk/

It shows they married 20 May 1850 at Canwick, Lincolnshire. George's father was John Jackson, while Rachel was single but her father was Edward Rogers (that sounds interesting :) ). To find the fathers' occupations you either need to check the Canwick parish register, or get the marriage certificate.

I'm not sure which John Jackson burial is the right one, though I would guess the 1827 one.

Actually, it looks like the correct burial for John was the 1830 burial:

Stamford Mercury newspaper (11 Jun 1830)
"On Sunday last, at Newark...aged 56, Mr. John Jackson, tinman, of Balderton-gate, Newark, leaving a large family to lament his loss."
