I am looking for information on my my 5x Great Grandfather

The below is what I was sent by a cousin.  I am looking for confirmation if possible.

Death:   2 10 1880, Sheffield general cemetry
Occ:   Table Knife Cutler

bachelor when wed
signed register with an X

Spouse:   Elizabeth SIMPSON
Death:   29 12 1831
Birth:   12 1798, Low Moor, Bradford
Father:   Joseph SIMPSON (1767-)
Mother:   Mary TORDOFF (1765-)
Marr:   2 7 1828, Sheffield Cathedral

Children:   George (1828-1894)
   James (1841-)

From George Holland and Mary Ann Simpon MC I have this

George Holland is 23 a Bachelor, occupation is a tailor.  Residence at time of marriage Park.  His Father is James Holland a cutler.

They were married 25 October 1851 in the parish church, in the parish of Sheffield. County York.

I am really keen to learn about Georges parents especially James.

I would appreciate any help.

In 1841 James is with a Matilda aged 20 so looks like he was only recently remarried.    A possible marriage is in Jun.qtr.1841 Sheffield where one of the possible brides is a Matilda Bradwell Gleave.   By 1851 James is widowed again and this could be her death entry - Jun.qtr.1847 Sheffield.

The christening date of 21/4/1809 shows parents were a James and Lucy Ann.   His re-marriage to Matilda in 1841 should confirm if his father was indeed a James.

I do have the baptism for George I believe this is correct?

Holland, George (of Sheffield, born 1828-11-19).
     Baptised December 14, 1828, by E M Hall at Sheffield Parish Church, Church Street, Sheffield.
     Parents name(s) are Elizabeth & James (Cutler).

I am now in the possession of the MC for James Holland and Matilda Bradewell Gleave.

Married May 09 1841 Sheffield.

James Holland 30 is a widower, cutler.  Father Geo Holland Cutler

Matilda Bradewell Gleave 24 is a spinster.  Father ? Gleave occupation ?

James Holland 1809-1880

The story so far
Marriage certificate for George Holland and Mary Ann Simpson, shows that George’s father is James Holland a Cutler
 
The 1841 census
George Holland is a lodger not with his father James. George is unmarried, 23 years old born 1820 Sheffield and is a Tailor.  This matches the Marriage Cert I have for George and Mary Ann
 
From the Sheffield indexes there is a baptism for George Holland
Born the 19 November 1828 Sheffield.  Baptised, 14 December 1828.  Parents are Elizabeth and James a Cutler this fits the above information.
 
I have not managed to find a marriage for James Holland to an Elizabeth
 
Death Certificate for James Holland
Died 29 September 1890 Union Workhouse, Sheffield, aged 71.  Occupation table knife cutler.  Cause of death Senectus (old age).  Informant J Heasite, master of the union workhouse, Sheffield.
 
Working back from this with censuses etc.
1871 census
There is James Holland living with a wife Annie.  James is aged 61 a table knife cutler born abt 1810 Sheffield.  Annie is 44 born America.  This is the only James Holland in Sheffield in 1871 I have found, however I do not think this correct.
 
1861 census
There is a J Holland who is an inmate at the Sheffield Union Workhouse (now this fits with the death certificate) he is a widower aged 52 a cutler.

1851 census
There is James Holland aged 42 born abt 1809 Sheffield is a widower, living at Sheffield Park; he is a table knife hafter.  There is a son James Holland, aged 9 born abt 1842 Sheffield.  There is also a lodger Henry Padler, aged 21, born 1830 Sheffield is a labourer.
 
1841 census
There is a James Holland aged 32, a table knife cutler, living with him is a Matilda aged 20 and John Gleave who is aged 60.

Marriage Certificate for James Holland and Matilda Bradewell Gleave

Married 09 May 1844 James Holland is 30 a widower, cutler.  I cannot make out the residence.   His father is George Holland and a cutler. 

I am tempted to think this is correct and that James father is George.

As yet no death has been found for Elizabeth Holland she must have died between 1828 – 1840.

I now have a death for Elizabeth Holland nee Simpson as the 29 December 1831. 

I am still trying to solve this, can anyone help.

I have the churchyard transcription for all the Sheffield churches and there is this burial for an Elizabeth HOLLAND in 1831.
HOLLAND Elizbeth 29   Dec 1831 aged 21 Blonk Island, buried Portobello, St George, Brook Hill

No cemeteries were open this early.

I am confused as you state he was born 1820 according to his marriage certificate and the 1841 census, but then you quote a baptism in 1828.
