STANLEY LAWRENCE DOUCE was born at 3 Bailey Road,Leigh although his mother was resident at 20 Friar Street, Shoeburyness?
Also born 17 Oct 1907 and birth not registered until 29 Nov?
Anything unusual there?

It depends whether that address was a private house or a hospital/nursing home.

To summarise we have:

Two births - Walter Henry born 1879 and Alfred Lawrence born 1881
1881 census we have Walter H born 1879
1891 census we have Henry born 1879 and Walter born 1881
1901 census we have Henry born 1879 and Alfred born 1881
1907 we have Walter Laurence marriage
1907 birth of Stanley Laurence Douce father Walter Laurence
1911 census we have a Walter Laurence born about 1881
1937 we have death of Alfred Laurence registered by Stanley Laurence son.

What a puzzle!!! It almost sounds as if Alfred adopted his brother's name for some reason.

I've just found a couple of entries on the WWI Service Medal and Award Rolls, 1914-1920. Unfortunately there don't seem to be any service records though.

The two Edwards on the '81 Census are also a puzzle - Edward C aged 9 and Edward J aged 5.

These may be -
Edward Charles, Dec 1871, Chelmsford, 4a 203
Edward James, Mar 1876, Orsett, 4a 220

Edward James Douce born 1876 died 1930 Orsett

Edward Charles Douce died 24th August 1949 Essex

S L Douce looks like Stanley Laurence Douce b 1908, Leigh on Sea, Essex.   

His parents are Walter Laurence b 1882 and
Jane (Jeannie from you and Jennie in m records) b 1880 in Shoeburyness Essex. 
Two more children Charles Walter b 1910, and William Patrick 1911.

Walter Laurence Douce is a railway guard b Bulphan.    Living in Cambridge Road, Shoeburyness.

No wonder you're baffled !    ???

The 1937 newspaper reports about the sudden death of Alfred Douce, Caulfield Rd, Shoeburyness give his occupation as Railway Guard.
Have you checked the 1911 Census for Walter Laurence Douce and occupation?
See previous post.   It's all a bit of a merry go round with their names.
