Annagh RC parish might be a possibility.  There is the following potential sibling baptised as Martin on 22 February 1860 with parents recorded as John Lyons and Winifred Meehan and sponsors James and Honor Lyons (right page, not quite halfway down page):

Hello Gaffy

If you could see me I am smiling out of pure pleasure.  That is Catherine and yes her brother Martin as well.  Superb. :) [Shame there isn't an icon for ecstatic!]

Thank you so much.

I haven't found Catherine, per reply #1 I posted this possible sibling (possible on the basis of the parents' names, county and timeframe), to alert you of the possibility of the location of Catherine being in Annagh RC parish.

While not saying "Do it yourself!" you are really better off going through the registers for yourself to get an image of the Lyons... maybe a spreadsheet with just year in a column, then go through registers for any BDM's, IF deaths are there then they might have age, so birth year can be figured out, (not always correct!) but then a "Sort" can get them in a timeline and then you can get marriage/children etc... plus there could be other siblings!!

Someone else may just get the 2 you named...as it takes quite a bit of time!
Give a man a record and you feed him for a day.
Teach a man to research, and you feed him for a lifetime.
