Who is Caroline Elizabeth Johnson?

Well, may be onto something here. I've found an image of the marriage record and George Johnson's father is actually Joseph.

Also found George and Caroline on the 1861 and Caroline Jnr is there age 5, born in Hammersmith.

Can't find them on the 1871 yet though..... and a death for George Johnson would be handy. Perhaps he died when Caroline Jnr was a young child and she gave her grandfathers name on her marriage records. Or perhaps I'm making things fit??

George Johnson is actually a labourer on the 1861 but there is a preceding word which I can't read!
On the marriage record Joseph is a Bargeman.

You mentioned Starch Green - this baptism appears to confirm George and Caroline:

Caroline Elizabeth 23 May 1856 / 18 Jun 1856 Shepherd's Bush , St Stephen , daughter of George and Caroline Johnson , address Starch Green , labourer.

So looks as if that could well be her unless it is a huge coincidence. If we could find an early death for George, it could be as Hampshire Lass suggested that it is her grandfather's name on her marriage. Or it could be that George was actually George Joseph and he was known by his second name, although unless he changed occupation it doesn't fit.

I think I may have unravelled what happened to Caroline Johnson , senior, and her daughter. Unfortunately it involves the 1911 census of which we cannot give details here. I couldn't find Caroline , born abt 1835 in Grays , anywhere after 1861 until 1911 where she is living with a married daughter. The married daughter is the key( the name has been transcribed incorrectly on Ancestry ).

In 1881 & 1891 Caroline senior states born Holloway or Islington, not France. There are late baptisms for Henry/Harry and Mary Ann Hosier but I cannot find  a marriage for John Hosier to Caroline.

Very sorry if this all sounds a bit incoherent. Hope you can see your way through it ! If you start with 1911 it may make sense.

Could this be Caroline's father - on the 1861 he said he was born Ware, Hertfordshire about 1831?
