If you want to see the Elstree marriage, you need findmypast
Hertfordshire, Parish Registers Browse, 1538-1988
Elstree, Banns & Marriages 1755-1860 (image eight)

A William Collins also witnessed this marriage in Enfield, 28 August 1777
James Hillman + Elizabeth Collins (spinster)

Now that William's signature does look quite similar to the Elstree one. Or perhaps they are all going to look much of a muchness!

Could you compare it with the witness to the 1767 Samuel Collins marriage (at Enfield) please, jonw ?

It doesn't look too similar, but not impossible. As the witness to Samuel's marriage has abbreviated himself to Wm and not written straight, it doesn't help. He might have had an off day signature wise, I've had a few myself.
But the William who witnessed the Elizabeth Collins marriage does have a very similar signature to the Elstree man (without saying they are the same person). So comparing that one with the one witnessing the marriage of Samuel will give you an idea.

Simon, you can get non-full transcripts from Familysearch. https://familysearch.org/search  but it seems that there's not going to be any killer info that will link the Enfield and Elstree Williams. John has provided a transcript of the image for the Elstree marriage.

To see the Elstree images you need to either

have a subscription to FindMyPast
have access to a library that has a subscription to FindMyPast
go to the Jersey Family History Centre after they confirm that they have got / can get the film or it has been put online
take a trip to the Hertfordshire Local Record Office

For the Enfield images, substitute Ancestry for FindMyPast and LMA for the Herts RO


EDIT: the Jersey Family History Centre will almost certainly also have access to Ancestry

When I'm in that situation, I try elimination, not always conclusive but can narrow the odds against it being the right people. Can any more be found about the couple who married in Elstree? Any baptisms of children nearer Elstree, any deaths or census records which would lead to the conclusion there were two William Collins / Ann couples.
Berks / Oxon: Eltham, Annetts, Wiltshire (surname not county), Hawkins, Pembroke, Partridge
Dorset / Hants: Derham, Stride, Purkiss, Sibley
Yorkshire: Pottage, Carr, Blackburn, Depledge
Sussex: Goodyer, Christopher, Trevatt
Lanark: Scott (soldier went to Jersey CI)
Jersey: Fowler, Huelin, Scott
